Tahini Cucumber Salad

  1. Accordion the cucumbers by making cuts along their length at 45° angles that are only halfway deep, then roll them onto their opposite side, and make cuts at a perpendicular angle to length of the cucumbers, again only halfway deep. Alternatively, use a spiralizer. The goal is to be left with what looks like the original uncut cucumbers, but with cuts such that they can be stretched out.
  2. In a bowl, whisk together the tahini, garlic, ginger, soy sauce, mayo, lime juice, chili oil, sesame oil, salt, and pepper until well-combined.
  3. Stretch open the sliced cucumber to make space for the dressing, and then use a utensil to press the dressing into and along the cucumbers.
  4. Serve immediately as-is, or over rice if desired. Optionally garnish with sesame seeds.
