Stuffed Dates
There are myriad ways you can stuff dates (no pun intended). This just happens to be one of my favourites. Feel free to swap out the goat cheese for something else that can hold the ingredients together, such as a nut butter, and play around with the toppings.
Instead of starting with goat cheese and honey, for convenience, feel free to use honey-flavoured goat cheese if you can find it.
These make a great party snack, since they’re finger food, they look pretty, they’re delicious, and they don’t need to be cooked or kept warm.
Ingredients #
- goat cheese
- honey
- medjool dates (either pitted or unpitted)
- pistachios
- smoked paprika
Instructions #
- Bring the goat cheese to room temperature. This can be done with a microwave if you’re in a hurry, but be careful to warm it gently, and don’t overheat it.
- Once the goat cheese is warm, use a silicone spatual to mix in some honey.
- If using unpitted dates, slice them lengthwise and remove the pits. If using pitted dates, carefully (without tearing) peel apart the two halves to expose a cavity for the filling.
- Stuff the dates with the goat cheese mixture.
- Chop or crush the pistachios, then sprinkle them on top of the stuffed dates.
- Sprinkle a little smoked paprika on top of the dates.
